{"id":189,"date":"2011-01-03T20:38:32","date_gmt":"2011-01-04T04:38:32","guid":{"rendered":"http:\/\/www.buchholz-cellars.org\/?p=189"},"modified":"2014-03-04T18:29:06","modified_gmt":"2014-03-05T02:29:06","slug":"3-dark-peach","status":"publish","type":"post","link":"https:\/\/www.buchholz-cellars.org\/?p=189","title":{"rendered":"#3 &#8211; Dark Peach"},"content":{"rendered":"<p>Bottled (13) 750ml (from 3 gallons) at 17% ABV on 3 January 2011.<\/p>\n<p>What&#8217;s &#8220;Dark Peach?&#8221; \u00a0 Well, it&#8217;s the exact same peaches I used for the <a title=\"#2 \u2013 Peach\" href=\"http:\/\/www.buchholz-cellars.org\/?p=186\">first non-dark peach<\/a>, and was going through fermentation at exactly the same time under the same conditions&#8230; \u00a0The only difference is that I used brown sugar in place of normal sugar. \u00a0Similar to some plum wines I&#8217;ve had at Chinese restaurant&#8217;s sweeter and thicker, but has a more complex flavor&#8230; \u00a0Butterscotch and\/or molasses and (of course) peaches. \u00a0Definitely a dessert wine.<\/p>\n<p>Update 24 November 2013&#8230; \u00a0Opened the &#8220;aging reserve for 2013&#8221; bottle tonight&#8230; \u00a0Seems to be aging well and smoothing out. \u00a0The residual sugars and flavors still remain.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Bottled (13) 750ml (from 3 gallons) at 17% ABV on 3 January 2011.
