{"id":216,"date":"2012-02-05T20:43:07","date_gmt":"2012-02-06T04:43:07","guid":{"rendered":"http:\/\/www.buchholz-cellars.org\/?p=216"},"modified":"2014-03-04T18:38:27","modified_gmt":"2014-03-05T02:38:27","slug":"14-nectarine","status":"publish","type":"post","link":"https:\/\/www.buchholz-cellars.org\/?p=216","title":{"rendered":"#14 &#8211; Nectarine"},"content":{"rendered":"<p>Bottled (16) 325ml and (16) 750ml (from 5 gallons) at 19.5% ABV on 5 February 2012.<\/p>\n<p>This is the first wine that, after it fermented bone dry, I finished to taste &#8212; that is, about a week before bottling, I added just enough sugar where I thought it tasted like nectarines again. \u00a0A slight side effect of this became apparent over time: \u00a0some bottles are ever so slightly frizzante, and a couple bottles actually &#8220;pop&#8221; when uncorking. \u00a0(This was noticed after the <a title=\"#18 \u2013 B.R.B. (Black-\/Rasp-\/Blue-berry)\" href=\"http:\/\/www.buchholz-cellars.org\/?p=234\">first batch of &#8220;BRB&#8221;<\/a> was discovered to be frizzante&#8230;) Fortunately, the higher alcohol content kept the in-bottle fermentation of the additional sugars in check!<\/p>\n<p>Only a slight &#8220;pop&#8221; and some very light bubbling from the 2013 Reserve bottle I opened on 10 January 2014. \u00a0The color is a very nice, rich, light amber color &#8212; and the flavor is most certainly of sweet, ripe, nectarines. \u00a0While smooth on flavor, there&#8217;s also a very subtle bit of a bite, perhaps a result of the combination of the slight frizzante-ness (is that a word?) and the (obvious) alcohol content.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Bottled (16) 325ml and (16) 750ml (from 5 gallons) at 19.5% ABV on 5 February 2012.
