{"id":231,"date":"2012-03-10T20:44:52","date_gmt":"2012-03-11T04:44:52","guid":{"rendered":"http:\/\/www.buchholz-cellars.org\/?p=231"},"modified":"2014-03-04T18:41:25","modified_gmt":"2014-03-05T02:41:25","slug":"17-kiwi","status":"publish","type":"post","link":"https:\/\/www.buchholz-cellars.org\/?p=231","title":{"rendered":"#17 &#8211; Kiwi"},"content":{"rendered":"<p>Bottled (24) 325ml (from 3 gallons) at 17.5% ABV on 10 March 2012.<\/p>\n<p><a href=\"http:\/\/www.buchholz-cellars.org\/wp-content\/uploads\/2012\/03\/IMG_1322.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" alt=\"IMG_1322\" src=\"http:\/\/www.buchholz-cellars.org\/wp-content\/uploads\/2012\/03\/IMG_1322-764x1024.jpg\" width=\"198\" height=\"265\" \/><\/a>I had seen kiwi used as a secondary ingredient in some other fruit wines, and wondered what it&#8217;d be like on its own&#8230; \u00a0I found a good deal on the fruit (they&#8217;re actually quite compact and heavy), and proceeded with prepping &#8212; peeling and slicing. \u00a0After I was done with the prep and had washed up, something just didn&#8217;t feel right with my fingertips, especially when rubbing my fingers together&#8230; \u00a0My theory is that the acids in the fruit had apparently worn down my fingerprints at least to the &#8220;feels really weird&#8221; point&#8230; \u00a0It took a few weeks for them to recover.<\/p>\n<p>The resulting wine is a deep golden color and (at least initially) semi-opaque. \u00a0Very different flavor compared to other wines, retaining a big kick of the fruit&#8217;s original &#8220;zing&#8221;&#8230;<\/p>\n<p>Revisited the 2013 reserve bottle on 3 March 2014&#8230; \u00a0Quite a bit of sediment, but it&#8217;s now very clear and a dark golden color. \u00a0The &#8220;zing&#8221; has mellowed only a little, but it now has some very nice honey flavors to it. \u00a0It&#8217;s going quite well with tonight&#8217;s chicken korma curry&#8230;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Bottled (24) 325ml (from 3 gallons) at 17.5% ABV on 10 March 2012.
