{"id":597,"date":"2013-06-30T21:48:04","date_gmt":"2013-07-01T04:48:04","guid":{"rendered":"http:\/\/www.buchholz-cellars.org\/?p=597"},"modified":"2014-08-14T19:43:52","modified_gmt":"2014-08-15T02:43:52","slug":"35-pineapple","status":"publish","type":"post","link":"https:\/\/www.buchholz-cellars.org\/?p=597","title":{"rendered":"#35 &#8211; Pineapple"},"content":{"rendered":"<p>Bottled (29) 375ml and (9) 750ml (from 5 gallons) at 12% ABV on 30.June.2013.<\/p>\n<p>Another sparkling wine! \u00a0This one wasn&#8217;t a surprise &#8212; after finishing to taste at 11%, I noticed that it had started bubbling again. \u00a0(Lower alcohol + hardy yeast + sugar = bubbles).<\/p>\n<p>One\u00a0surprise, however, was the amount of work it took to siphon out of the carboy and into the bottles &#8212; all that bubbling was counter-productive to siphon operation! \u00a0The other surprise was coming home from work the day after bottling to discover one oddly-positioned bottle in the middle of all the other freshly-corked-but-yet-unlabeled bottles&#8230; \u00a0Turns out the bottom of the bottle had blown out from the pressure! \u00a0I suppose that&#8217;s what I get for not using champagne bottles for\u00a0an actively-sparkling wine! \u00a0More tragic losses have fortunately been averted by storing in the refrigerator.<\/p>\n<p>In addition to the plentiful bubbles, this wine is crisp and fresh &#8212; with a light taste of pineapple. \u00a0Best served\/stored chilled. \u00a0Several people have (independently) suggested that this would pair well with ham!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Bottled (29) 375ml and (9) 750ml (from 5 gallons) at 12% ABV on 30.June.2013.
